Coffee Shop Diaries // Pannikan

Pannikans is coffee shop discovery #2 in my cross-country move.  I actually found it while driving to Loft Coffee on a Friday and saw a line coming out the door. That's when you know it's good! This gem is located inside an old, big, yellow house just outside of Encinitas in Leucadia (another long trek for me but oh so worth it).

It's very quaint.  They have fantastic outdoor picnic table seating on their lawn, and patio seating on the lower and upper levels.  The indoor seating is quite cute as the wooden walls are well decorated by work of local artists and large letters spelling out "soul" & "love" as well of a wall featuring community flyers for local businesses, artists, and events.

So the setting is great, but what about the coffee?! Well it's great! I've really taken to the double almond milk latte, which looks so beautiful in the tall glasses they serve it in.  The iced teas are also great.  While they do serve full breakfast plates I have never partaken in them because their pastry case just calls my name.  And I haven't ventured too far into all the sweet goodness in it because the pie calls my name louder than the rest. Yes, pie.  I. Freakin. Love. Pie.  So many god pies too! They have fruity like apple, cherry, raspberyy or rhubarb.  PLus they have yummy cream pies as well.  It's hard for me to go and not get pie.

This is a great place to take people since they have great seating options and food that all will like.  They supposedly have wifi but I didnt see their name listed so I just used my phone as a hotspot while there. So if you are looking to get work done call I'd call and ask beforehand, otherwise Lofty Coffee is great (or I mean Starbucks too). I highly recommend this place as a friend hangout as well as a solo visit. I go solo to relax, write or read.  Also to eat pie.

Coffe Shop Diaries // Lofty Coffee Co.


I love coffee x infinity.  So when I made the move across the country, one of my priorities was to find a great coffee shop to "replace" the ones back home.   The first one I visited, I fell in love with.

 It had all the things I wanted in a coffee shop "work space".  Yummy coffee (the roasting occurs right across the street).  The iced coffee is also made Kyoto style which is a method of cold brew involving coils and overnights dripping.  Its complicatedly beautiful.

They partake in the art of latte "design" with the basic leaves and hearts.  Nothing makes you feel more special and fancy than a heart running through your salted carmel latte.  They have delicious muffins and scones (I bet the cookies and brownies are good too).  And of course wifi.  


 I have made it a habit to come here with my laptop to get some work done.  It stays pretty crowded so finding a table isn"t always the easiest of tasks but generally speaking people will share a table with you.  Outside seating is also available but just as hard to come by with the perfect SoCal weather and all. They also have a new secondary shop across the street with their espresso menu and treats.  It has plenty of seating and is always a bit quieter.

Once my time at the coffee shop is finished i sometimes walk down the main street in Encinitas and peek in shops, or go down the the creek on B Street (which feels like a piece of Georgia) or farther down to the beach for a bit.  If i don't have time i hop back on Coast Highway for the 25-ish minute drive home (a good coffee shop is worth the trek). And spend the next week craving a sweet latte and a muffin.
